Uses: Preparation of citrates, flavoring extracts, confections, soft drinks, effervescent salts; acidifier, dispersing agent; medicine; acidulant and antioxidant in foods (for details see regulations of Meat Inspection Division of USDA), sequestering agent, water- conditioning agent and detergent builder; cleaning and polishing stainless steel and other metals; alkyd resins; mordant; removal of sulfur dioxide from smelter waste gases, abscission of citrus fruit in havesting; cultured dairy products.

Hazard:      Inhalation of dust irritates nose and throat.  Contact with eyes causes irritation.  CITRIC ACID reacts with oxidizing agents, bases, reducing agents and metal nitrates. Reactions with metal nitrates are potentially explosive.  Heating to the point of decomposition causes emission of acrid smoke and fumes
